I put almond lace cookies for my third iteration because I thought was the toughest. When I made, I suddenly found out this is the easiest one. The chocolate chip cookies is the hardest one for me because it is really hard to control the sugar, combining brown and normal sugar.
Making almond lace cookies need to prepare 25g cake flour, 20g unsalted butter, 2 egg white, 65g sugar, and 80g almond.
First,mixing eggs and sugar and butter. When the bubble comes out, it can add the almond and flour. stirring softly and carefully because almond is easy to break.
I leave for 2-3 hours. The temperature is 375 F and baking for 20 minutes. I try really hard to make my cookies really thin with spoon. And I used fork to separate all the almond.
Almond lace cookies taste really good. It is my third iteration also is the most successful one. After each iteration, I was getting more familiar with controlling ingredients and temperature.
